Fiesta de Maiz (Festival of Corn)

Rocking Horse Cafe presents a special menu celebrating corn in all its edible incarnations. With 4,500 year old culinary roots that can be traced back to Central Mexico's Tehuacán Valley, corn (America's earliest cultivated crop) may have been the New World's first multi–cultural food experience. So valuable an agricultural commodity, Mexico's golden crop was once used as currency.

braised pork shoulder in dried corn – tomato mole, roasted jalapeno salsa, black beans

grilled organic king salmon fillet, cotija polenta, sauteed portabellas, chipotle crema, cilantro

Pan Dulce de Maiz con Frutas
